Casper’s 66 to begin expansion, remodel next week

Casper’s 66 in Linn will soon see an overhaul, as plans to remodel the business for the first time since 1991 will begin Monday.

Owner Tim Thoenen said he and his employees are excited about the expansion.

“This is really about making it easier for our employees to do their jobs, and making the experience even better for our customers,” said Thoenen, noting a big change is the closure of the auto repair shop.

The east side of the building, constructed in 1973, has been emptied of its contents following an auction Sunday.

Thoenen said the reality is that there is more demand for food and other items than auto repair.

Next week, the project will begin with the removal of the garage.

With continued growth at the college, there is more business at the store and Thoenen said the remodel will increase kitchen space as well as offer more seating in the dining room. Currently, Casper’s can accommodate 30 diners, and the new design will create space for 52. There will be a few new items on the menu as well.

“The floor plan will give a chance to spread everything out, so that customers can get through more easily,” Thoenen noted.

Expansion of the building to the east and north will create the extra space to accommodate Thoenen’s goals.

His hope is to have the remodel completed by Sept. 1, but along the way, the business will remain open.

“It will be painful, but we’ll do the best we can,” he added.
